I work full-time and am always searching for recipes that are simple, quick, and delicious. My co-worker and I like similar foods and I am so glad that she shared this recipe with me. (Thanks, Lynne!)
Sauté spinach, halved grape tomatoes, and sliced mushrooms in olive oil - that's it! I also add a dash of McCormicks Perfect Pinch for Vegetables seasoning.
You can use fresh spinach or frozen. If you use frozen spinach, be sure to thaw and drain prior to adding to your sauté pan.
It looks great and is super yummy!
