As I have aged, I have developed tastes for things that I once thought were.....well.....gross. Things that I would have never even put near my fork, let alone, my mouth. One day, after the opening of our new Sam's Club, I was drawn to the deli counter that was full of prepared entrees and side dishes. I love broccoli and just could not wait to get home to try their broccoli salad. I immediately fell in love with it and knew that, one day, I would figure out how to make it at home. Besides, it was not that complicated.......broccoli, purple onion, walnuts, raisins, bacon, and some kind of dressing.
Fast forward to this morning.........I have made the most delicious version of Broccoli Salad - if I do say so myself! I am so excited. Now, you know where I came up with the name.........lol
Trudy's Excited Broccoli Salad
(2) bunches Broccoli, cut into bite-size pieces
(1) pint Grape Tomatoes, halved
(1) cup Purple Onion, diced
(12-14) slices crispy-cooked Bacon, crumbled
(1) cup Raisins
(1) cup dry roasted Sunflower Kernels
(1 1/2) cup Mayonnaise
(4) Tbsp White Vinegar
(1/2) cup Sugar
Freshly ground Black Pepper, to taste
Mix all ingredients in large bowl. Refrigerate. Enjoy!
Additional Notes:
- I prefer to include the stem of the broccoli as well. Just peel and dice for an added flavor.
- I would suggest putting this in a large plastic container with a lid so that you can shake it multiple times prior to serving.
- For full-favor, it is best to make this recipe ahead of time in order to allow flavors to meld together.
- This recipe makes a large bowl - one that would be suitable for a gathering; however, this recipe can be easily adjusted.
